I think you will find that just about everywhere, with the possible exception of Indian Casinos, the dealers pick up the cards in fixed order such that if there is a dispute about a previous hand, they can back through the discards and reconstruct the hand exactly as played. Many years ago, some dealers tried sorting the cards as you suggest, but this was recognized as cheating right away. I haven't seen it anywhere for 20 years. Some system sellers claim it happens because it sounds plausible, but they are selling hot air. Avoid it and stick with a decent counting system. If you ever come across a dealer who is arranging the cards in a preferrential way when picking them up, call the cops. PV.
