In your game (8 deck) you should only "hit" your 11 vs the dealer's ace. Splitting 4's against a 5 and 6 is correct because of the DAS rule. And no, you should not double 8 versus 5 or 6.

Note that this is the "basic strategy" for the game. Individuals who are counting cards will be able to accurately make the plays you mention on occasion because they will know more about the remaining composition of the shoe.
