I died of laughing reading your post and I believe every single observation you've made. I've been in the covered souks in Istamboul and Aleppo as tourist and have a taste of what you described regarding the hanging meat and what is served as described "meat".
One thing I noticed in Bahrain was that from far you wouldn't know if a woman (entirely covered) was coming towards you or going away. Also, I could not explain what they were really doing when seated squat in the middle of nowhere... Oh mysteries of life.
